I can’t describe how much more confident this book made me in the kitchen. I can plan a meal knowing I most likely have all the tools and basic ingredients I need to succeed. Reading Darryl Spence’s personal stories, learning that even professional-level chefs have to learn through trial-and-error, made me so much nicer to myself when I made kitchen mistakes; after all, I couldn’t learn what over salted chicken tasted like– and how to fix it next time– until I made the error. Mistakes are never fun, but I’m getting smarter every time I make one.
